RECIPE: Crispy Keto Crackers

Sometimes you just want a little crunch, right? These Crispy Keto Crackers will take care of that ‘craving for crunch’!

They are low-carb, gluten-free, paleo-friendly and perfect if you’re making a transition to the ‘Eat Savvy’ approach and away from packaged foods. They have a nice nutty taste and are amazing with an’Eat Savvy’ approved dip or with a chesse platter!

Ingredients:

  •  1⁄2 cup almond flour
  • 1 cup mixed seeds. eg flax, chia, sesame, hemp, sunflower, pepitas
  • 1 tbsp ground psyllium husk powder
  • 1/2 teaspoon of Xanthum Gum (this is optional if you’re using Chia or Flax, it simply helps it all stick together better.)
  • 1 tsp salt
  • 1/4 cup melted coconut oil
  • 1 cup boiling water

If you’re following an anti-inflammatory protocol as part of your ‘Eat Savvy’ challenge – you may want to swap out sunflower seed, chia seeds and pepitas for more of the other seeds.

Instructions:

Oven to 150°C, fane bake ideally.

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together. You can use a mixer machine, or mix by hand.

Keep working the dough until it forms a ball and has a gel-like consistency.

You can make the crackers thin or thick – still seems to work well. Thin – we tend to divide the dough in half and bake on 2 trays – but you can do it have thick on 1 tray too.

Using baking paper, roll the dough between 2 sheets and flatten out evenly and slide onto trays.

Remove the upper paper and bake on the lower rack for about 45 minutes, check occasionally in case the oven has hot spots. Seeds are heat sensitive so pay close attention towards the end. Also if not golden brown – you can leave them a little longer.

Turn off the oven and leave the crackers to dry in the oven. Once dried and cool you can break them up.

Store them in an airtight container so they stay crispy. Also make sure they are completely dried and cooled before storing.

No trays? No Worries! We’ve made these by simply sliding the baking paper sheet with the rolled out dough directly onto the oven racks.

Want them even thinner and crispier? Divide in 2 and roll out as thin as you can!
