RECIPE: Cauliflower & Broccoli Cheesy Bake!

Move over Pizza . . . this low carb cauliflower & broccoli cheese bake is ready in just about 30 minutes and is always a hit.
It can be eaten as a meal with salad, but also makes the perfect side dish.

Notes about this recipe and the Savvy Team Weight Loss or Wellness Programs.

  • A great recipe for the ‘Kick Start’ Phase in the Rapid Fat Loss Protocol, but NOT suitable for other phases.
  • As with our recommendations for the Eat Savvy Diet – if you can choose quality, organic produce and dairy products from grass-fed cows, that is ideal!
  • We don’t recommend eating this much cheese on a regular basis . . . however this is great for those transitioning from a standard diet to a savvier way of eating.
  • This recipe is not suited for our Detox Program, as cheeses are usually avoided.

Ingredients

  • 1 head of Cauliflower – broken into florets
  • 1 large head of Broccoli – broken into florets. (You can also use a frozen mix of these)
  • 1 Red Onion – cut into wedges
  • 1 Leek – sliced
  • Fresh herbs such as Basil, Rosemary, Thyme or a tablespoon of Italian Herb Mix.
  • 125g Cream Cheese (leave out of refrigerator to soften)
  • 250 mis Sour Cream
  • 1 cup of grated Cheddar Cheese
  • 1/2 cup grated Parmesan Cheese
  • Salt & Pepper to season
  • Extra Virgin Olive Oil

Instructions

Preheat oven to 200 degrees celsius.
Precook the Cauliflower & Broccoli by steaming.
Mix the cream cheese and sour cream in a bowl to blender until smooth. You can add olive oil to make the mix thinner.
Oil the bottom of a baking dish and arrange the cauliflower and broccoli florets in the dish.
Top with onions, sliced leeks, and herbs and then spread over the cream cheese and sour cream mixture.
The mixture will most likely be thick, so dollop and spread as best as you can. You can stir the cream cheese mixture into the steamed vegetables to combine more evenly if you prefer, however arranging them nicely makes for a nice looking finished product you can take to the table for serving.
Top with the rest of the cheeses, plus some salt and pepper and more herbs if you choose.
Bake for 30 minutes or until golden brown, crusty and delicious!
